Rainy Day Ramen

Some days the weather makes the decision for you. It is raining, you are not going anywhere, and the only reasonable response is a bowl of ramen that takes thirty minutes and asks nothing of you except a little patience with the soft-boiled eggs.

This miso ramen is simple enough for a weeknight slump but feels like something you would order at a tiny place with steamed-up windows. The broth comes together fast from good stock and white miso. Do not rush the miso in -- whisk it gently so it does not clump.

Ingredients

  • 2 packs ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 soft-boiled eggs, halved
  • 1 sheet nori
  • 2 spring onions, sliced
  • 1 cup spinach
  • Chilli oil, to taste

Instructions

  1. Bring broth to a simmer over medium heat.
  2. Whisk in miso paste and soy sauce until fully dissolved. Do not boil after adding miso.
  3. Cook noodles according to packet instructions, then drain.
  4. Divide noodles between two bowls and pour over the miso broth.
  5. Top with halved soft-boiled eggs, nori, spinach, and spring onions.
  6. Finish with a drizzle of sesame oil and chilli oil to taste.
